*****VEGAN BLUEBERRY PANCAKES

SO SIMPLE AND SO DELICIOUS

INGREDIENTS
2 cups Almond or Soy Milk
2 cups Flour
2 Tbsp Baking Powder
2 tsp apple cider
1 tsp vanilla
1 tsp cinnamon
1 Tbsp vegetable oil
Fresh blueberries

Mix apple cider and milk together, wait unti curdles a little (about 10 minutes, soya seems to work better than almond according to the guest chef today). 
Mix together dry ingredients.
Add vanilla to wet ingredients.

Use vegetable oil and iron (black) pan.  Preheat when ready, a small amount of the mixture will sizzle in the pan.  Pour about 1/4 cup in the pan, sprinkle blueberries on top.  When pancake starts to bubble and almost dry, it is ready to flip (a minute or so).  Now flip and wait until turns brown.

Serve with maple syrup and enjoy.
