SLOW COOKER CHINESE CHICKEN QUINOA BOWLS, an extra recipe for March


CHINESE CHICKEN QUINOA BOWL (reviewed, revised and approved by my faithful readers)

INGREDIENTS
6 boneless chicken thighs
3 Tbsp soy sauce
1/2 cup honey
3 Tbsp lime juice
2 Tbsp worcestershire sauce
1 Tbsp grated ginger
1-2 Tbsp sriracha sauce (or powder and skip the flakes)
1/2 tsp red pepper flakes
1/4 tsp minced garlic (or 2 to 4 cloves and remove when done)
2 cups quinoa, cooked
Broccoli slaw
Pea pods
Avocado
Cilantro if desired

INSTRUCTIONS
1. Spray your slow cooker with nonstick spray. Place the chicken in the bottom. Mix together soy sauce, honey, lime juice, worcestershire, ginger. Sriracha, red pepper flakes, garlic and pepper. Pour into slow cooker on top of chicken. Cook on LOW 4 to 6 hours or HIGH 3 to 4 until chicken is cooked. Shred chicken with two forks, and let cook 15 minutes longer.
2. Assemble bowls with quinoa, broccoli slaw, pea pods, avocado, cilantro and any other toppings your like. Enjoy!!!!!

SKILLET "BAKED" BEANS March 6 RECIPE

SKILLET "BAKED" BEANS MARCH 6 RECIPE, 308 calories, 8 servings, 12 grams dietary fiber, cost me nothing!!!!

Sweet as can be!
INGREDIENTS

4 strips bacon, cut in 1 1/2 in pieces, had it last week instead of pancetta for my Italian bean dish
2 cups chopped sweet onion, chopped up an onion I had left over last week
3 cans beans (rinsed (any kind-chickpeas, pinto and kidney beans), I "bought" three cans, FREE, at Cashwise this week with a 30 dollar purchase, chili beans, dark red kidney beans and black beans, so I did not rinse the chili beans because the pork and beans below just sounded disgusting, but did rinse the kidney and black beans
2 cans pork and beans...no no no
2 Tbsp packed dark brown sugar
2 Tbsp Worcestershire sauce, to be honest...this is what? so I just threw in some chili pepper flakes and called it good
2 Tbsp cider vinegar, I have gallons of this from Fleet Farm
2 Tbsp molasses, I found this squirreled away. 
OK so I chopped up the green onions I had left over from last week and will use that as a garnish

I wasn't going to do
this but with the
modifications, it was
a FREE DISH!!!!!
DIRECTIONS

Cook bacon in a deep, medium skillet until crisp. Drain on paper towels. Pour off all but 2 Tbsp drippings from pan. Add onion and cook over low heat, stirring occasionally, 15 minutes, or until golden.

Stir in remaining ingredients. Bring to a boil, reduce heat and simmer, stirring often, 25 minutes, or until mixture thickens. Sprinkle with bacon and serve.
