14. CORNBREAD & BEEF SKILLET PIE, maybe good for camping/dutch oven could switch to August

14. CORNBREAD & BEEF SKILLET PIE, I am concerned about the high caloric content in this recipe and so this will definitely be modified.

Ingredients
1 lb lean ground beef (I might change this to vegan or chicken), with dry vegan "meat" could transport easily.
1 can ranchero beans (also high calories, would substitute a green vegetable like zucchini), if I substituted vegetables, they could be dehydrated
1 an whole kernel corn (use frozen to avoid cans), also dehydrate
1 pkg cornbread mix (I am really not interested in this, too many chemicals, if I use camping the cornbread mix might be good, especially if I found one where all you have to do is add water
1/2 cup shredded pepper jack cheese (change to low fat, add jalapeno in above or red pepper flakes), once again milk products?, not for lactose intolerant, may just change to spices.

Directions
Heat oven to 400 F

Brown ground beef in a large skillet with heat proof handle over medium high heat. Stir in ranchero beans and drained whole kernel corn. Simmer 2 minutes.

Meanwhile, prepare cornbread mix as package directs.

Spook cornbread mixture on top of beef mixture in skillet. Sprinkle with shredded pepper jack cheese. Bake 15 minutes or until a wooden pick inserted in center of cornbread comes out clean. Cool 5 minutes

Preparing for a break, review of the first two weeks

Today I am nearing the end of the first week of recipes. As you have noticed I had to make several adjustments to make them heart healthy. First, I would not buy the ham again, too salty, and if you are any type of healthy regimen at all, salty ham is not the way to go, whether made with turkey or pork. I doesn't have that much of a nutritional value, except for some protein, perhaps. I think it could be skipped altogether. Finally, today I am cooking the spaghetti squash recipe, tomorrow the tomato soup and I will change that to a cooked soup, and keep the focaccia as planned, once again without the meat. The revisions and review are to follow.
By the end of the week I will be in San Diego, and reviews of food there will be posted here. Join me in my travels.

10. PERFECT ROAST CHICKEN 10 of 366, January

10. PERFECT ROAST CHICKEN (Italicized means it is for 6 people), 10 of 366.

Ingredients
 1 (2 small lemons)
1 Tbsp butter (1/3 stick butter (4 Tbsp)), softened
1 whole garlic (1 Tbsp minced garlic)
1/4 tsp each (1 tsp each dried marjoram and thyme)
pinch of pepper (1/4 tsp pepper)
1 chicken breast with skin on) 1 roasting chicken (5 1/2 lb) giblets reserved for another use
1 potato not skinned, cut in quarters (2 lb red skinned potatoes, cut in quarters or eights if large)

Directions
Heat oven to 400 F. Line a large roasting pan with nonstick foil. Grate enough zest from lemons to make 1 Tbsp. Cut lemons in quarters. Mix butter, garlic, lemon zest, marjoram, thyme and pepper in a small bowl.

Slide fingers under breast spread half of butter there and the rest on top of the skin, put a cut up lemon under the chicken breast, and place in roasting pan.  (and as much of leg as possible to loosen skin from meat. Spread about 3 Tbsp butter mixture under skin; spread remaining over skin. Put cut-up lemons in body cavity. Tie chicken legs together. )Place in roasting pan.

Roast for 20 minutes under aluminum foil with potatoes and then about 15 minutes more without the tent. Roast 1 hour, covering chicken loosely with a foil tent after 20 minutes to prevent it from overbrowning.

Remove roasting pan from oven, arrange potatoes around chicken and stir to coat with drippings. Roast 30 minutes longer, or until potatoes are tender and a meat thermometer inserted in thickest part of thigh (not touching bone) registers 165 F. Remove chicken to a cutting board or serving platter; let rest 10 minutes before carving. If desired, while chicken rests, return potatoes to oven to brown further.

1 Tbsp brown or dijon mustard
