RECIPE 30/56 GRILLED CHEESE & ROMESCO SANDWICHES
INGREDIENTS
3 Tbsp silvered almonds, toasted
1 cup jarred roasted red peppers, drained and patted dry
1 garlic clove, pressed
6 large basil leaves
2 Tbsp light mayonnaise
4 ounces part-skim mozzarella cheese
12 slices oatmeal sandwich bread
6 slices creamy havarti cheese
DIRECTIONS
PREP TIME 10 MINUTES TOTAL 30 MINUTES 6 SERVINGS 350 CALORIES
1. For sauce, place almonds into Manual Food Processor; cover and pump handle until finely chopped. Add peppers, pressed garlic, basil and mayonnaise to processor bowl; cover and pump handle until smooth. Grate mozzarella cheese; set aside.
2. Spray double griddle with EVOO; heat 1 to 3 minutes until shimmering. Spread about 2 Tbsp of sauce over each of 6 bread slices; top with cheeses and remaining bread slices. Cook 12 - 14 minutes or until golden brown and cheeses begin to melt. Turn over; cook an additional 3 to 5 minutes or until golden brown and cheeses are completely melted. Sere immediately.
