RECIPE
VEGAN SLOPPY JOES (5/56)
INGREDIENTS
1 medium onion
1 jalapeno pepper
2-3 limes, divided
3 garlic cloves, pressed
1 Tbsp grated fresh gingerroot
1 Tbsp canola oil
1 cup rehydrated vegetable protein (texture is similar to ground meat when cooked)
1/2 cup hoisin sauces
1/2 cup no salt added ketchup
1/4 cup water
2 tsp toasted sesame oil
3/4 cup thinly sliced red cabbage
3/4 cup thinly sliced green cabbage
1/4 cup chopped fresh cilantro (optional)
4 hoagie rolls (I will place on rice instead)

DIRECTIONS:
PREP TIME 20 MINUTES, TOTAL TIME 25 MINUTES YIELD 4 SERVINGS

1.  Preheat oven to 400 F.  Finely chop onion and jalapeno.  Juice limes to measure 1/4 cup and set aside. Combine onion, jalapeno, pressed garlic, ginger and canola oil .  Cook 5 minutes or until vegetables are softened.

2.  Add TVP, hoisin, ketchup and water to Saucepan;  cook 5 minutes or until flavors are blended.  Add 2 Tbsp of lime juice and sesame oil;  mix well.  Remove from heat.

3.  Combine cabbages, cilantro, remaining 2 Tbsp lime juice and mix well.  Bake rolls if using.   Remove and cut in half, but not all the way through.  Fill with TVP mixture and slaw and serve immediately.
