With lemon zest |
This is the Grilled Vegetable Salad, recipe 44 of 56 from February 14. The Lemon Zest adds a lot, but the marinade is what makes the vegetables unique. I actually dry roasted the vegetables in an electric grill, then lightly tossed with the marinade. This is an excellent salad and would be great for any time of the year. In the winter, you could use parsnips and carrots and other root vegetable or even a winter squash. This recipe is a summer squash and red pepper recipe. Wonderful, not that hard except for......you guessed it the slicing and dicing. The marinade is five minutes.
