GOOD FRUIT ‘N FIBER MUFFINS

The most delicious muffins in the Universe hot out of
Brigitta’s Kitchen.
2 cups flour
2 cups shredded carrots (about 4 medium or 3 large)
1 ¼ cups sugar, consider splenda
1 cup shredded zucchini (about 1 small)
1 granny smith apple grated, leave the peel on, if you use a softer apple it will only shred into a sauce, crispier the better
¼ cup regular raisins, I am not a fan so switched to golden raisins, but I am sure any dried fruit would work ...... cranberries
¾ cup sweetened shredded coconut
½ c. chopped walnuts (or pecans, or combination)
2 tsp. baking soda
1 Tbsp cinnamon
1 ¼ tsp. grated orange peel
1 tsp. vanilla
1 drop of almond extract
½ tsp. salt
3 large eggs
1 cup of enriched expeller pressed safflower oil (or 1/2 cup
applesauce and ½ cup oil or all applesauce)
DIRECTIONS
For muffins, mix together all above ingredients except eggs
and oil. Beat eggs and oil in separate
large bowl to blend well. Sir dry
ingredients into egg mixture. Spoon
approximately ¼ cup batter into each of 24 greased or paper lined muffin
tins. Bake 25 minutes 375 degrees, can
take out a few minutes early depending on doneness. Let muffins cool for 5 minutes, then brush
with Orange Glaze or eat as is.
An hour later I was in St. Cloud and ate a wonderful meal at a surprising location, R/J Grill right off the Freeway at the 75 exit at the Truck Stop. Incredible salad greens with candied walnuts and balsamic vinaigrette and red pepper bisque with shrimp and an adult grilled cheese that included roasted tomatoes. The coffee was good too. So I enjoyed the whole thing and was very pleasantly surprised at the excellence of this road food stop. $12.95 for sandwich, coffee and shrimp bisque, it can't be beat. Oh, hey, AND the Vikings won against Detroit, another pleasant surprise.
These are scrumptious! The taste, texture, and appearance of this moist muffin are all complex and surprisingly, pleasing. It is dense, and heavy, like old fashioned brown bread. When you take a bite, there is substance. They also last several days, if not a week, in the refrigerator.
