peach salsa

PEACH SALSA

Simple chopping and mixing is all that is required.  And while you can serve it right away, I think it gets better to let the ingredients marinate together—have a little party if you will.  Adjust heat to your liking.   This recipe is mild, I added more pepper and jalapeno.  Make sure to use ripe peaches.   Makes all the difference in the world.




INDREDIENTS FOR 12 SERVINGS
1 ½ cups of ripe peaches, diced , about 2 to 3 depending on size
1 cup tomato, diced about 2 medium
1 tablespoon jalapeno, finely minced about ½
¼ cup red onion, finely diced
1 tablespoon cilantro, chopped
juice of 1 lime
¼ tsp ancho chili powder or other chili powder
1 tablespoon brown sugar packed I DID NOT USE THIS BECAUSE THE PEACHES WERE SWEET ENOUGH
salt and pepper to taste, ONCE AGAIN I SKIPPED THIS BECAUSE THE CHIPS HAD ENOUGH PEPPER
INSTRUCTIONS:

MIX ALL INGREDIENTS AND SERVE OR CHILL AND SERVE.
