*****Nov 25 PECAN PIE RECIPE

PECAN PIE RECIPE

Last year I had a comparison tasting at work.  I compared Karo syrup to agave and to wheat berry syrup, the wheat berry syrup won the taste test.
PREHEAT OVEN TO 350 F
MIX TOGETHER THESE INGREDIENTS:
1 cup of brown rice syrup (or dark or light karo syrup, if that's what you have)
1 cup of unprocessed cane or other sugar (depends on what is available)
1 tsp vanilla (I use my homemade stuff, rum with vanilla bean soaked for months)
2 Tbsp melted butter
3 eggs beaten

MEANWHILE PLACE THE PIE CRUST OF YOUR CHOICE IN PIE PAN (AT LEAST 8 INCHES)
ARRANGE THE WHOLE PECANS FROM THE CENTER IN CONCENTRIC CIRCLES TO THE EDGE ON THE BOTTOM
POUR THE MIXED INGREDIENTS SLOWLY OVER THE PECANS

BAKE FOR 40 TO 50 MINUTES OR UNTIL KNIFE COMES OUT CLEAN FROM THE CENTER


Made this tonight for tomorrow's visits with friends.   I will have to drive at least 5 hours tomorrow, so got it done tonight after work.

Still planning for work pot luck in the middle of December.  Should be good.

Today I had some Caribou coffee over the noon hour  I really like their caramels, they have kind of a cinnamony flavor.  I've tried making them, but they stick to the waxed paper and never seem to keep their shape....a future project.   Today, I ate leftovers at work, it was great.   One positive for making huge meals over the holidays.
