I am listing the menu in order of preparation.
1. Cook the sweet potato 375 for 60 minutes, let cool
2. CRANBERRY SAUCE: 1 cup water, 1/2 cup sugar or other sweetener, boil until the berries pop and mash down, cool before serving. usually calls for 1 cup of sugar but that seems like too much
3. STRAWBERRIES DIPPED CHOCOLATE: Clean and let strawberries air dry, lifting leaves away from berries so they can be used as a handle for dipping in the chocolate, melt the chocolate slowly, 30 seconds at a time in the microwave (if starts to stiffen up add a dot of butter or other solid oil until smooth, stir in between, continue until soft and then dip fruit, in this case strawberries and let cool on parchment paper, should eat within 24 hours. (Saw another recipe that intrigues me, strawberries dipped in yogurt and frozen, you cut them open and they are beautiful)
4. STUFFING without the turkey. Roast 1 cm cubes of different breads (focaccia, bolillos, whole grain) at 350 F, brushed with EVOO and Italian seasoning for about 15 to 20 minutes or until a little toasted. Meanwhile sautee: 2 cloves of garlic, 1/2 yellow onion, celery heart chopped, 1/2 small red pepper, chopped mushrooms in EVOO or butter until clear; add 1/4 to 1/2 cup of chopped smoked turkey and stir together, then stir in Roasted Bread Cubes. Add dried cherries, 2 chopped up apples, and chopped water chestnuts, and a little ground sage. Place all in baking dish with about 1/2 cup water or enough to fill dish to 1/3 cm, cover with aluminum foil and bake for about one hour. Serve with roasted almonds (sliced and lightly salted and baked at 350 for 6 minutes).
5. SALAD: see guacamole salad from earlier post, I also added some chopped baked sweet potato, not a very good idea actually, would have been better without it. Refrigerate after creating.
6. GARLIC MASHED POTATOES: boil chopped up red potatoes for 25 minutes, drain, mash and add butter and garlic, (I put in too much garlic, forgot the milk), not too impressive really.
7. MEAT DISH: bake already cooked meat for one hour at 350 F, covered with aluminum foil and added some water in the bottom to keep it moist. It was ok.......much better before baking.
8. ROASTED VEGGIES: cut up one butternut squash, two potatoes, place in oven at 350 degrees, brush with EVOO and sprinkle on italian seasoning, after 40 minutes add one beet, one zucchini, and 1/2 onion, also brush with EVOO and sprinkle seasoning, bake another 20 minutes until veggies crisp a little, salt to taste and serve
9. 3 small peach pies for DESSERT: besides the chocolate covered strawberries which end out being snacks all day, I added these: place a little brown sugar, cinnamon, and dot with butter on bottom of creme brulee dishes, place peaches upside down on top of the above, dot with a little butter, cover with pie crust, wrapping inside the dishes and over the peaches, after piercing with fork sprinkle with water and shake a little sugar over the top that will brown the crust. Place on top rack of oven and cook until brown about 40 minutes, at 350 to 400 F depending on whether they are actually browning, I had to turn the temp up to get them to brown. PHOTOS TO FOLLOW
