Today's dessert was yogurt, lemon zest,  drizzled honey, covered with fresh blackberries  yummy. I rehabilitated the squash soup yesterday with cumin and cracked pepper which was also yummy and much more appealing.   Today had a  sandwich  with swiss cheese, which was so-so.  If it weren't for the dessert, I would have been unhappy.  You will see the photos as soon as I get back to my main computer.    I picked up a cucumber so I could make the Tzatziki Sauce for the Spanikopita for "Creative Weekend with The Girls":    landscape/still life acrylics for some, quilting for others, you will see the  results soon.
 TZATZIKI SAUCE "COOL GREEK YOGURT SAUCE WITH VEGGIES AND HERBS"
PREP TIME:  20 MINUTES
READY IN   20 MINUTES
SERVINGS 8
INGREDIENTS
2 8 OUNCE CONTAINERS PLAIN YOGURT
2 CUCUMBERS PEELED, SEEDED AND DICED
2 TBSP OLIVE OIL
1/2 LEMON, JUICED
SALT AND PEPPER TO TASTE
1 TBSP CHOPPED FRESH DILL
3 CLOVES GARLIC, PEELED
DIRECTIONS:
IN A FOOD PROCESSOR OR BLENDER, COMBINE YOGURT, CUCUMBER, OLIVE OIL, LEMON JUICE, SALT, PEPPER, DILL AND GARLIC.  PROCESS UNTIL WELL-COMBINED.  TRANSFER TO A SEPARATE DISH, COVER AND REFRIGERATE FOR AT LEAST ONE HOUR FOR BEST FLAVOR.
