This is one of my favorite combinations for a treat. I don't really need to add honey, or zest of lemon, which I will do with fresh berries alone. I will post the recipe, it is right from Classic Canning recipes from the books you can get at Fleet Farm, with a few variations. Today's lunch wasn't that aesthetic looking so I didn't take a photo. I had intended to braise some beef with garlic and spice some whole grain penne pasta with olive oil, garlic and mint, but the time stopped me.
SALAD RECIPE The salad I did created was something I would make again.
1. Cook the pasta, about half way through
2. add the dehydrated corn, a small handful and a few minutes before done....
3. add a handful of dehydrated roma tomatoes
4. Drain off water rinse with cool water, place on one side of your container (I am packing lunch here) can also add sliced grilled extra thin steak or a whole boiled egg to slice when serving or toasted almonds to add protein, although the yogurt in the dessert may be enough, on the other half of the same container 5. tightly pack in some freshly rinsed green leaf lettuce, drizzle olive oil over the whole thing then
6. crack some pepper over the top.
DESSERT RECIPE: for my lunch box:
In the top container
1. place about 1 tsp to 1 Tbsp of homemade blueberry jam
2. Cover with 1/2 to 1 cup of plain yogurt.
FOR A LUNCH MEAL REFRIGERATE AT WORK. EAT FOR LUNCH......DELICIOUS. PREP TIME: 15 minutes, for the whole thing.
A few new restaurants to check out in the next week or so: Bella's in Fergus Falls. So far, everyone I have talked to says they have never been disappointed. Also Santa Lucia in Fargo. I will let you know.
Anyone read Krueger's Northwest Angle, I think I have the name right. Let me know if I am remembering wrong. I have heard it is his latest book and a good read.
