Tuesday The Day After

Not what it sounds like. It's the day after the first snowstorm and I am planning for a warm vacation as soon as possible. Who knows where? My moniker is an underwater being and definitely not in any local water, brrrrrrrrr...... So today, a homemade latte and leftovers end out being the fare. I will attempt a one person dessert, from a list I downloaded from Minnesota Localfoods.com a few years ago. There is a site that has a list of school meals made from locally grown foods, everyone has been a hit. Mexican Lasagna, unusual name but great taste, loved by friends, family and co-workers. There was also an apple crisp recipe for one....I am remembering it and wanting it. I will attempt that tonight after a few errands. Also need to have a great meal for work tomorrow and will be perusing my stash of recipes compared to my refrigerator and pantry of canned and dried foods from the summer. I am thinking yogurt with homemade blueberry jam as a dessert topped with freshly roasted sliced almonds sprinkled with freshly ground sea salt and perhaps that soup with some cumin...we'll see.
