COCONUT BLONDIE? Dec 7

Where do you find coconut flavoring?   Just like the neufchatel, this will be one of those searches that will take me into many grocery stores........or maybe just keeping my eyes open in one store.   So far I am up to several desserts:  pecan pie (not a good choice for low calories, carrot cake, yogurt and fruit.
COCONUT BLONDIE RECIPE (this turned out really well but it is a little dry for me)
8 servings, 250 calories a serving
OVEN AT 350 F, coat an 8" by 8" baking pan with cooking spray and dust lightly with flour.
COMBINE IN A BOWL
1 cup all-purpose flour
1 1/4 tsp baking powder
1/8 tsp salt
MIX IN A SEPARATE BOWL
4 tablespoons trans-free margarine, melted
2 large egg whites
1 large egg
1 cup packed light brown sugar
1 tsp coconut extract
1/2 tsp vanilla extract
STIR IN FLOUR MIXTURE INTO EGG MIXTURE UNTIL WELL COMBINED THEN STIR IN
2/3 cup sweetened flaked coconut

POUR INTO BAKING PAN

BAKE 25 TO 30 MINUTES, OR UNTIL TOOTHPICK INSERTED IN THE CENTER COMES OUT WITH  FEW MOIST CRUMBS.   COOL IN THE PAN ON A RACK FOR 30 MINUTES.  CUT INTO 8 BARS
