That Moroccan Egg dish is growing on me, I like the spiciness and even look forward to it. I am wondering about incorporating it into my mole dish......Lovely morning. Am looking forward to celebrating with a friend from work who completed 33 years and 5 months of employment. I will bring the cake, the balloons, flowers, oh and chocolate dipped fruit....can't wait to see what others are doing for someone who has done so much for others. Photos to follow. Meanwhile breakfast was great, I am enjoying a home made latte right now, added a little sprinkle of nutmeg which kind of fizzed in the cup. I am not sure why, but that will be a question I hope to have an answer to........eventually. I have successfully stayed away from eating establishments for a while. These new dishes have me looking forward to cooking at home.
Lunch was great, tons of photos, I'll share the setting with you. I made a spaghetti sauce, simple and fast: *****RECIPE FOR SPAGHETTI SAUCE: sauteed onions and garlic, add crushed tomatoes 14 ounces for each 4 servings, (I used 42 ounces) and a Tbsp of EVOO, plus Italian Seasoning, let simmer for one hour.
*****RECIPE FOR LITE Italian Meatballs (enough for about 2 meatballs each for 12 people): You don't have to preheat the oven just put it at 350 F, then take 2 lbs ground Lean Turkey, a couple of handfuls of oatmeal, one egg, Italian seasoning to taste, 1 Tbsp EVOO, you can add breadcrumbs if too wet. Roll into 2 inch round balls, and place on baking sheet(s) covered with aluminum foil, bake for 60 minutes. About 20 to 30 minutes into baking the oven will reach 350 F, then brush or spray the meatballs with EVOO so they will brown on top. Once bake you can throw into the Spaghetti Sauce.
Cook one box of local Penne Pasta (1/3 for each 4 people) (Dakota Pride) al dente (about 10 minutes in water that has already been brought to a rolling boil.) Drain and wait for the meatballs and sauce.
SALAD WAS SIMPLE: LETTUCE AND SHREDDED CARROTS WITH EVOO AND BLACK PEPPER
DESSERT: Chocolate dipped apples and strawberries.
