***RECIPE: Shakshouka AKA Huevos Rancheros Moroccan Style

*** (too smokey for me, but I like the spiciness)  SHASHOUKA AKA HUEVOS RANCHEROS MOROCCON STYLE
For one:
1 tsp EVOO
1/2 small onion chopped
2 cloves garlic finely chopped
1/2 large bell pepper, any color, diced
2 roma tomatoes chopped
1 chipotle pepper diced (probably better with only 1/4)
2 tsp adobe sauce
2 tsp light brown sugar
1 tsp ground cumin
1/4 tsp paprika
cracked black pepper to taste
1 egg
DIRECTIONS:  Saute onion and garlic in EVOO for a minute or so, until soft, add pepper and sautee for 4 minutes add tomatoes, pepper, sauce, sugar, cumin, paprika and pepper and cook together for 20 minutes or until thick.  Once thick break one egg gently into the center, cover and simmer for 10 minutes
PREP TIME:  1/2 hour  CALORIES:  200




Great way to start the day, enjoy, this might be something you like.  I would make it again
