*****Microwave Salted Nut Roll Bars

Alright, I have to confess, sometimes I have a sweet tooth.  The salted nut roll will get me every time, and they have them at Fleet Farm, sometimes in the check out lane.  Now while I am there I am picking up canning supplies and thinking of local produce and how to live with dignity, locally, minimizing my impact on the environment.  The focus is there, and then.........the salted nut roll.  I am not sure how they originated, but I remember a place near my home town where a lot of Fischer nuts and candies were made and I wonder if that is how I got introduced to them.   Lots of salt, lots of sweet, this recipes clocks out at over 6,000 calories for the batch if I counted correctly.  So, if there are 10 bars, they are...........not to overstate the obvious.    However, the creative weekend is upon me, and I discussed this possibility with the participants.  How did this happen?   At work.   Of course.   There it was, something I had been wondering about for a while and it tasted just like the ones in Fleet Farm.....only better, fresher,  mmmmmmmmm.    Oh well, anyone reading this, forgive me but I have to have this on my blog.

RECIPE:  Microwave Salted Nut Roll Bars
3 Tbsp butter
1 bag peanut butter chips
1 can sweetened condensed milk
1 big mini marshmallows
1 can of cocktail peanuts

Melt butter and chips in microwave until smooth 1 to 2 minutes (i.e. melt together, but not burnt....remember cardinal rule, could be broken here).

Add milk and heat another 1 to 2 minutes but do not boil.  Stir together, add marshmallows and 1/2 the peanuts.  Place 1/4 peanuts on bottom of a buttered 13X9 pan. Pour in mixture.  Place rest of peanuts on top and press in.  Leave uncovered in cool place until formed.  Cover too early and they will get sticky.
