INGREDIENTS
1/4 small Vidalia onion (large pale yellow onions with sweet flavor)
2 Tbsp apple juice
2 Tbsp canola oil
2 Tbsp rice vinegar
1 Tbsp soy sauce
2 medium carrots, peeled
1/2 medium seedless cucumber, seedless around here are bad tasting so used a seeded one instead
1 small Funi apple, used a Braeburn
2 bunches fresh watercress (5 ounces/150 grams) had to use mixed greens.. where is the watercress
Black sesame seeds (optional), never found the sesame seeds, that's ok would've stuck in my teeth
DIRECTIONS
PREP TIME 15 MINUTES TOTAL TIME 15 MINUTES YIELD 6 SERVINGS CALORIES 70
1. For dressing, finely chop onion using chopper to measure 2 Tbsp. Combine onion, juice, oil, vinegar and soy sauce in Small Bowl. Whisk well and set aside. I used a table top Ninja ($20)
2. Cut carrots into julienne strips. Slice cucumber; cut slices in half. Remove core from apple. Thinly slice apple lengthwise; cut slices into thin strips.
3. Combine carrots, cucumber, apple, watercress and dressing in Stainless Bowl; mix gently. Transfer salad to serving bowl. Sprinkle with sesame seeds, if desired.
