*****HERR1/30 Skinny Turkey Tandoori

HEALTHY EATS RECIPE AND REVIEW (HERR)

This is the beginning of series of recipes where I incorporate animal protein into the meal.  Why?  Basically it is an experiment, once again, run by me on me.   Will the introduction of protein, a different source of calories than the one I have been using since January, change anything for me?  Once again the trick will be to make food that is palatable and visually appealing.   This is the first of 30 recipes for my new series "Healthy Eats Recipe and Review"  HERR

"SKINNY TURKEY TANDOORI" (right out of Pampered Chef with a few modifications.

INGREDIENTS:

1 lime
1/2 cup plain nonfat yogurt divided in half
2 Tbsp chopped fresh cilantro divided in half
1/2 small onion (I used a whole one), finely chopped
1 1/2 tsp ground coriander (I used whole coriander and ground it myself)
1 1/2 tsp ground cumin
1 tsp smoked paprika
2 garlic cloves, pressed
2 tsp graded fresh gingerroot
2 tsp tomato paste
2 tsp canola oil
8 turkey breast cutlets (about 1 lb)
3/4 cup water
2/3 cup uncooked whole wheat couscous
1 medium zucchini




DIRECTIONS (CALORIES 250), 4 SERVINGS, total time if marinade is made the day before is 40 minutes.

1.  (zest lime to equal 1 tsp, squeeze lime to equal 2 Tbsp and set aside)
FOR SAUCE:  combine zest, 1/4 cup yogurt, 1 Tbsp cilantro and 1/8 tsp salt.   Mix well and refrigerate.
2.  FOR MARINADE  (MAKE THE NIGHT BEFORE, THAT WILL SAVE 30 MINUTES OF PREP TIME):   Place coriander, cumin and paprika in pan, heat for 3 to 4 minutes or until fragrant, stirring constantly.  In a small bowl combine:  lime juice, remaining yogurt, onion, toasted spices, pressed garlic, ginger, tomato paste and oil; mix well.
3.  Place Marinade the Turkey in large resealable plastic bag; seal and turn carefully to coat, refrigerate for 30 minutes, maximum 1 hour.
4.  Cook couscous according to directions (boil water, add couscous, cover with lid, let sit for 5 to 10 minutes), fluff couscous, add remaining cilantro and cover and serve warm.
5.   Remove turkey from marinade and discard marinade.  Grill marinaded turkey on electric grill (like a George Forman) for 3 to 5  minutes.
6.  Ribbon the zucchini and create flowers to decorate the plates.
7.  Serve the turkey with couscous, sauce and zucchini ribbons.

I SERVED THIS AT WORK:   Comments:  This is great.   I like the zucchini.  Had to get more food to fill me up (this is a concern for me, and I am wondering if that will be the end result of eating such calorically dense food.....will a little NOT go a long way?).  Personally I loved everything about this.   An unusual combination of flavors....that were nothing less than perfect.
