Black Bean Salsa with Fried Plantains (Feb recipe 51/56), Gluten Free and Vegetarian

Oh, sweet sweet plantain, I've got the
Caribbean on my mind, who knows
if they actually serve this stuff outside
of the home.   I hope to find out soon.
It isn't hard to see why I was tempted to put this in my recipe series, all the makings of an exotic meal without the plane fare and travel, fairly authentic, although the salsa seems more Mexican than anything.  I would add a jalapeno to the salsa and drain the tomatoes a little to make it have more substance, as usual I add the salt at the time of serving, so I can taste it.
