I am modifying all the work Women's Day did, reviewing their recipes one by one, and modifying for one..........we'll see. The final recipes may not represent the original intent, and I substitute when necessary. See what you think. The task this week is to reduce these recipes, I will tell you how I do it for all 7, this has taken over 2 weeks to get through:
1. SAUSAGE & KALE SOUP, done and delicious, 1/4/15
2. FRESH TOMATO SOUP
3. RATATOUILLE & WHITE BEANS, done and delicious, but in large doses extremely gassy, great with melted cheese on top, like an Italian chili, 1/5/15
4. RAVIOLI WITH GARLIC-HERB OIL, done and delicious 1/6/15
5. ROASTED FRESH LAMB
6. LAMB TAGINI, done and tested 1/7/15; Extremely salty, good in small doses, not a fan of couscous, whole brown rice would've been better.
7. SPICY SAUSAGE & VEGETABLE FRITTATA
PRODUCE (this was an expensive trip, even with everything I already had I probably spent about $80, but that wouldn't be bad for meals for 4 I guess)
2 medium onions
1 large sweet onion
2 heads garlic (11 cloves), (already have a bag from Costco, already peeled and frozen)
3 medium yukon gold potatoes about 1 1/4 lbs (will use my 3.99 bag of red potatoes from Cashwise)
3 medium sweet potatoes (same as above), I bought one only
4 1/2 lb large tomatoes (about 12), I used Roma tomatoes
1 medium eggplant (1 1/2 lb)
3 medium zucchini, I bought 2 small zucchini
2 bell peppers, 1 bell pepper
1 spaghetti squash (about 2 1/2 lb), the smalles one
12 ounces fresh kale (already have 8 ounces)
2 large leeks (will use scallions instead), I bough 1 leek
2 bunches basil (buy fresh), I bought fresh oregano, no basil available and too lazy to go somewhere else, I guess I could've used dried basil.......
1 bunch chives (will use dried)
1 bunch parsley (will use dried)
BAKERY
4 slices focaccia bread (make pain fogasse, using my treize dessert de Noel recipe), already have a frozen one from before, I'll show you when I make the cheese sandwich. I bought one take and bake for the sandwich.
MEAT/POULTRY/FISH (the most expensive part as always)
8 oz fully cooked smoked turkey sausage (will buy smallest one and freeze a half), so I found a couple of Andouille sausage links and used that instead
2 lb boneless leg of lamb or lamb stew meat (try to get 8 ounces of stew meat), I got the 8 ounces of stew meat
Ok I did buy an 8 dollar ham.....salt overload I guess, this was really bad, wouldn't do it again.
DELI (I'll try to skip these items if I can)
8 proscuitto slices (I don't care for this, it's slimy, will use maybe the ham instead, because I know I'll have a lot left over.......or turkey or sharp cheddar)
REFRIGERATED
1 pkg (8 oz ) fresh whole milk mozzarella (love this and will definitely get)
4 ounces part-skin mozzarella (absolutely)
1 pkg (20 oz) four-cheese ravioli (Maybe use a small amt of the Buitoni stuff), I'll have to freeze most of it
GROCERY
5 cans (14.5 oz) reduced-sodium chicken broth (will use the cubes), I ended out getting a low salt Swansons, one carton, another option is to boil up leftovers from a rotisserie chicken.
1 can (28 oz) fire-roasted diced tomatoes, I got an 8 ounce amount
1 can (8 oz) tomato sauce
1 can (6 oz) tomato paste, smaller the better
1 can (15 or 15.5 oz) cannellini beans
1 jar (6 oz) artichoke hearts, already have, wasn't sure so I bought some
1 container (8 oz) olive tapenade, will chop up olives and mix with EVOO
8 ounces spaghetti pasta (1/2 a 16 oz box), 4 ounces, I have some at home
1/4 cup golden raisins, these are expensive but delicious
1 pkg (6 oz) dried apricots, I'm having a hard time not eating them all first
1 pkg (7 oz) dried prunes
1 box (10 oz) whole-wheat couscous, already have
1 pkg (6 oz) slivered almonds, will use whole almonds, already have
