*****BREAKFAST PIZZA with Fillo, finally....Dec 3, 2011 Traveling...on the road again?

I finally have a nonsoggy personal pizza.   This one is a great healthy breakfast item.   The tomato paste is some roasted tomatoes combined with onions, basil, olive oil, roasted at a low temp over an hour.  Then I placed it in 1 cup freezer jars I had bought at Fleet Farm (where I get most of my canning supplies).  So this morning I place about 3 Tbsp inside 2 sheets of fillo I had thawed out in the refrigerator the night before, because I was going to make a low calorie apple strudel today, I put the oven at 350 F and put everything inside a custard cup and let it bake until I was ready to put in the apple strudel, which didn't work out (but I was excited about a 100 calorie dessert so I tried the recipe anyway).  This breakfast pizza was the best so far, the only problem is that the fillo dries out quickly and is basically unusable for anything else.   A kind of big expense for this project, so it will be back to the drawing boards looking for my excellent pizza dough (healthy, low calorie and not soggy).

Looks like poached eggs, actually is fresh mozarella, sliced in half and oven baked

Let's see what food the day will bring.  Unfortunately I now have a stomachache and am still tasting dinner from Grazies......that meal was at least 1000 calories and all unsaturated fats.
