As part of the low calorie meals I am attempting to put together, locally grown produce, melt in your mouth delicious, good for your heart....etc. I have found this incredible Carrot Cake Recipe which I easily made this morning before work. The baking time is long 45 minutes at 350 degrees. But the prep time is minimal and you can make the frosting before the cake is done, let the cake cool down on the way to work, and place the frosting on right before serving. I made a few changes but none of them affected the delicious outcome.
INGREDIENTS for cake
A. FIRST MIX together:
2/3 cup regular flour

1 tsp ground cinnamon
1/4 tsp salt
1 tsp baking soda
B. and whisk together
one large egg
one egg white
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1/3 cup fat-free yogurt
1 Tbsp canola oil
1/2 tsp vanilla
1 cup shredded carrots
8 ounces crushed pineapple in its own juice (SMALL CAN)
C. Then combine A&B and pour into 8 by 8 inch square pan that has been sprayed with baking spray
INGREDIENTS for frosting
6 ounces of NEUFCHATEL CHEESE, AT ROOM TEMPERATURE
3/4 CUP cup of powdered sugar
1/4 tsp vanilla (I used 1/2 tsp vanilla and 1/4 tsp almond flavoring)
COOK AT 350 FOR 45 MINUTES OR UNTIL TOOTHPICK COMES OUT CLEAN (TOP WILL LOOK BROWNED AND EDGED WILL HAVE PULLED AWAY FROM THE SIDES)
9 servings, each is 250 calories
