RECIPE FOR CUCUMBER RAITA for 2





CUCUMBER RAITA

1 cup low fat plain yogurt drained (wet paper towel and squeeze out water, place inside a colander or sieve put the yogurt over that, place in refrigerator over a bowl, letting it drain overnight, makes it thicker)
1/4 cucumber, peeled and seeded
1 large jalapeno pepper, seeded and finely chopped
1 Tbsp lime juice
1 Tbsp snipped fresh cilantro
1 Tbsp snipped fresh mint
1/4 tsp salt

Slice cumber into 1/4 inch thick slices cut each slice in half.  Add all ingredients to yogurt and mix well.  Cover and refrigerate for at least one hour.
