One of the problems is getting tasty foods, finger foods, that are renal friendly. A go to food for many is fries, turns out that carrots, onions and broccoli are good for you.
Cut a few pounds of your favorites (sorry parsnips and sweet potatoes are out), many others are in!!
I've tried the carrots and broccoli.
Preheat oven to 400 F.
Cut vegetables in strips
Tablespoon or so of vegetable oil, to toss them in.
After coating with chili powder or cayenne or any herb you like.
Toss in two beaten egg whites
Then toss in salt free panko flakes
Bake for 35 minutes, turning once, consider frying for one minute if you are short on time and like them a little crispier.
Serve with the onion dip I mentioned in a prior blog!!!
